About This Coffee

Turntable keeps moving. This month, we're headed to the mountains of South Sulawesi, Indonesia.

September's release is a full-bodied, smooth coffee from producers around the Cooperative of Toraja Coffee Growers, grown as high as 2,000 meters above sea level.

Roasted medium-dark, it delivers vanilla, dark chocolate, and a touch of citrus, with relatively low acidity and the deep, rounded body Indonesian coffees are known for. It's an especially good choice if you like rich coffee but still want sweetness and complexity beyond the roast itself.

The coffee is processed using Giling Basah, Indonesia's distinctive wet-hulling method. Producers depulp and ferment the coffee, wash it, begin drying it in parchment, and then remove that parchment while the bean still holds considerably more moisture than it would in most other processing traditions. The exposed coffee then finishes drying, helping create the distinctive body and character associated with coffees from the region.

Small producers throughout the area have increasingly organized around community micro-mills to improve processing and consistency, while partnerships with exporters help provide milling, logistics, quality control, and better access to international buyers.
